Cloud Eggs

These are rather popular and many variations can be found on-line. My method is fast and simple.

INGREDIENTS

  • 8 eggs
  • 1/2 lb finely chopped cooked pancetta
  • 1 cup finely grated gruyere cheese
  • S&P to taste

PREPARE

Preheat oven to 450 degrees.

Separate the eggs. Use an electric mixer to beat the egg whites until a soft peak forms (about 3 minutes)

Gently add the cheese and pancetta.

On a greased baking sheet, spoon egg white mixture into 8 round mounds

In the center of each mound, gently place one egg yoke. S&P to taste.

Bake for about 5 minutes. When the egg whites start to turn golden brown, you know they are ready..

CHEF's NOTES:

  • You can substitute diced ham or cooked bacon for the pancetta if you like. Parmesan can be substituted for the gruyere. Add a sprinkle of chopped chives to the final prep.
